Isidoro Polencic Winery

Isidoro Polencic entails a journey towards the northern-eastern part of Italy, to the famed Collio region, on the borders between Italy and Slovenia. This is a place with a long-standing tradition of dedication to viticulture, a place blessed by the proximity of the sea and protected by the mountains.  The family produces white wines from grapes that are rigorously selected, noble and speak to the beauty of the land from which they were born.

Viticultural Details

The vineyards date from 10 to 25 years old and they use the Guyot system providing good density.  The soil is rich and comprised largely of marl and sandstone.

Chardonnay DOC

Vinification and Maturation

The harvest is typically made in the second half of September and it is done by hand.  After collecting the grapes, the fruit is softly pressed, undergoes a 12 hour maceration process and then fermented at a cool controlled temperature.  The wine then rests and ages in steel tanks (70%) and used oak barrels (30%) for approximately 6-7 months before coming together again in the bottle. Of course, this wine is 100% Chardonnay and tends to have a higher alcoholic content than other white wines.

Tasting Notes

Color: clear, crisp and light golden yellow

Bouquet: ripe golden apples, pie crust

Flavor: appetizing fine taste with good acidity to balance the alcohol

Serving Suggestions:  good combination with low fat hors d’oeuvres, soups and white meat
